Here’s a quick, easy dinner idea!
I roasted veggies in the oven, cooked chicken strips in a pan on the stove and cooked pasta. People ask me all the time, how do you eat clean and cook dinner for your family? Well, they eat it too! Here’s what I put together for our meals. They are basically the same but varied a little.
Disclaimer: the girls only ate half of their food, which is pretty typical.
Eat the rainbow! Here’s how to roast veggies:
Recipe: Bake in the oven at 400° for 30 minutes and my veggies for lunch are done for the week. I used a little olive oil, Italian seasoning and garlic powder, lemon pepper is good too!

In the containers I have one protein (chicken) and 2 veggie servings = delicious and nutritious!
I like how there are so many possibilities of cooking veggies like this which makes changing it up very easy.
